Queen’s Jubilee Recipes

Ann-Marie our Head of Service Industries shows you how to make a lovely Victoria Sponge and tasty Cheese Scones. Recipes below the video!

 

Victoria Sponge

Ingredients

  • 200g sugar
  • 200g margarine
  • 4 eggs
  • 200g flour
  • 2 tsp baking powder
  • Jam
  • Icing sugar

 

Method

  • Sift flour with the baking powder
  • Line Victoria sandwich tin with silicone paper
  • Crack eggs and beat together
  • Cream sugar and margarine together
  • Add the egg gradually
  • Fold in the flour carefully, taking care not to over mix
  • Divide into two 18cm sponge tins
  • Bake for 15 minutes at 375f or 180c
  • Turn out the cakes from the tines and leave to cool on a baking tray
  • When they are cooled, spread jam across the cake bases and sandwich together
  • Dust the top with icing sugar!

 

Cheese scones

Ingredients

  • 6oz cheese
  • Pinch of salt and pepper
  • 1 x teaspoon mustard
  • 1lb of self raising flour
  • 2 eggs
  • ¼ pint of milk

 

Method

  • Rub the margarine into the flour
  • Add the salt, pepper and mustard powder
  • Stir in the cheese
  • Add the beaten egg and milk
  • The mixture should be a soft dough
  • Roll out to required depth, we recommend about one inch in depth
  • Cut out using a suitable cutter.
  • Bake for about fifteen minutes until golden brown
  • The scones can be egg washed, or you can sprinkle grated cheese on top before baking
  • Leave in the oven for fifteen minutes
  • Cool on a baking tray after cooking
